Desserts
Everybody likes dessert. Epecially me. Whenever I run across a cool dessert recipe, I'll put it here (I don't mean common things like cookies. I'm talking about cheesecake and other not-so-average desserts). They will also be tested. I'm not putting something up here unless I've actually had some.

I did not write any of these recipes. I tried to give credit where I could, though. As always, make sure the ingredients are still good. IE if it moves, don't eat it :)

Mini Cheesecakes
Ingredients:
30 vanilla wafers, 2 pkgs (250 grams) light cream cheese at room temperature, 3 eggs, 2/3 cup granulated sugar, 1 TBSP lemon juice, 1 and 1/2 tsp vanilla divided, 1 cup light sour cream, 2 TBSp granulated sugar.


Recipe:
Line 30 muffin cups with meduim size paper baking cups. Place 1 vanilla wafer, flat side down, in bottom of each muffin cup.

In large bowl beat cream cheese with electric mixer until smooth. Add eggs one at a time beating well after each addition.

Add 2/3 cup sugar. lemon juice and 1 teaspoon vanilla. Mix well and pour over the muffin cups, filling 3/4 full. Bake at 325 degrees for 20 minutes or until slightly set. Cool for 5 minutes.

In another bowl mix together sour cream, 2 TBSP sugar and the remaining 1/2 teaspoon vanilla. Spoon over cheesecakes.

Bake at 325 degrees for 10 more minutes. Cool completely.

Refrigerate.

Serve topped with fresh fruit if desired. (or use cherry or blueberry pie filling)

Back in Spanish II, we had to bring in a dish from a country and I wound up assigned with the Phillipines. After hopping on the Google Express, I disemarked at PHILIPPINE RECIPES. I looked in desserts, and found this recipie. Naurally, I choose it (who can resist the cheesecake?), cooked it, brought it to school, and dug in. It tastes very good, and is pretty easy to cook (considering that I was able to cook it with no problems). No arguments about getting a bigger slice either, because it comes in individual cupcake things.
Sweet to the Core Apples
Ingredients:
Apple, brown sugar, tinfoil


Recipie:
Cut the apple in half.
Remove the core.
Fill the cavity that remains with brown sugar.
Put the two halves togeather again.
Wrap in tinfoil.
Put in a campfire.
After it's warm enough, take it out, unwrap, and enjoy!

This is one of my favorite desserts for when I'm camping. They are especially good after a hard day of hiking. Just don't try cutting the apples in the dark. I did that once, and almost severed my finger while I was at it. :) It took nearly six months for all the feeling to return to it. The worst part is I dropped the apple, so it was all covered in blood and dirt and blood-mud, so I didn't get to eat it :(
